Let’s turn back the clock to the 1930s and 1940s, a period of immense global upheaval following World War I and the looming shadow of World War II. Here in Vietnam, our country was under French colonial rule (from 1858 to 1954).
In the late 19th century, the French left a significant architectural mark on Vietnam, and in Hanoi, the grand Sofitel Legend Metropole Hanoi stands as the first 5-star hotel, completed in 1901. This magnificent hotel employed many young Vietnamese individuals, one of whom was a bright and hardworking bartender named Giang.
However, the bar faced challenges due to shortages of condensed milk, sugar, and other essential ingredients. Mr. Giang, a truly creative and intelligent young man, was determined to innovate. He thought to himself, “Why can’t I create something special, something unique and amazing?” This drive led to many sleepless nights, his mind buzzing with possibilities. Then, one morning, he suddenly awoke, exclaiming, “Egg coffee! Egg coffee!” And that’s how the legendary Vietnamese Egg Coffee was born!

The main component of this unique beverage starts with regular Vietnamese coffee powder. While it might not be the exceptionally rare and expensive Weasel coffee (cà phê Chồn), which is truly scarce, it’s still of good quality. Coffee plants thrive in the Central Highlands (Tây Nguyên) of Vietnam, scattered across provinces like Đắk Lắk, Đắk Nông, Kon Tum, and Gia Lai.
First Step: The yolk is carefully separated from fresh chicken eggs and placed into a mixing machine along with sweet condensed milk, sugar, and other fragrant ingredients. The exact recipe for these aromatic additions remains a closely guarded family secret! While this rich yolk mixture is being whipped to creamy perfection, other staff prepare the hot, brewed coffee.
Second Step: The fragrant, whipped egg yolk mixture and the freshly brewed coffee are then combined in the machine. The chef flips the switch and lets the magic happen for a few more minutes, allowing the two elements to blend beautifully. Finally, this creamy, aromatic concoction is poured into a cup.
And that’s it! A perfect Giang’s Egg Coffee is ready to be enjoyed. For an extra touch of artistry, the chef often draws beautiful floral patterns on the surface of the egg coffee foam.

NOTE: The original Giang’s Egg Coffee is located at 39 Nguyen Huu Huan. However, you can also experience this iconic drink at Cafe Dinh, located at 13 Dinh Tien Hoang Street. This is one of the two original egg coffee shops. Mr. Giang’s daughter, after starting her own family, sought her father’s permission to open this cafe, situated right next to the west side of Hoan Kiem Lake.
