For the Vietnamese people, Pho evokes images of a delicious specialty boasting an incredibly fragrant aroma, a subtly sweet and deeply flavorful broth, and an abundance of enticing ingredients, all brought together by the secret recipes passed down through generations in each local eatery.
While there are delightful variations, the two main types of Pho are Pho Bo (rice noodle soup with beef) and Pho Ga (rice noodle soup with chicken). Today, I’ll describe the fascinating process behind preparing the star of the show: the broth. Because, as we all know, the broth (nước dùng or nước lèo) is the heart and soul of Pho. Without it, it simply isn’t Pho!
The dedication to creating the perfect bowl of Pho begins long before sunrise. At many restaurants, as early as 3 or 4 AM, while most of us are still sound asleep, the staff are already heading to the local markets. There, they carefully select and purchase the freshest ingredients: vibrant vegetables, aromatic herbs, fiery chili, pungent ginger and garlic, fresh green onions, zesty lemons, delicate rice noodles, and the star proteins – tender chicken for Pho Ga and flavorful beef for Pho Bo. Crucially, they also procure a generous amount (5-10 kilograms!) of ribs and backbones (xương sườn, xương sống) from chicken, pork, beef, or even water buffalo. These bones are the key to creating that rich and complex broth.
After the market haul, they return to the restaurant, meticulously clean the ingredients, and begin the crucial task of preparing the broth for the day ahead.
